Ingredients
- 1 1/2 cups (360 ml) heavy whipping cream
cold
- 1/4 cup (25 g) unsweetened cocoa powder
use 1/3 cup for darker flavor; sift
- 1/3 to 1/2 cup (40-60 g) powdered sugar
start with 1/3 cup; add more if sweeter
Instructions
Chill a mixing bowl and beaters for 10-15 minutes if you can.
Pour the cold cream into the bowl and beat on medium until frothy and slightly thickened, about 1-2 minutes.
Sift in the cocoa powder and powdered sugar. Mix on low just until combined so the powder does not fly everywhere.
Increase speed to medium-high and beat until stiff peaks form. Stop as soon as it holds its shape; overbeating turns it grainy or buttery.
Spoon or pipe into 4 small bowls or glasses. Refrigerate at least 1 hour.
Notes: Powdered sugar dissolves more smoothly than granulated. Granulated can work if you sift the cocoa well and whip a little longer. Keeps covered in the fridge about 2 days. Serve as-is or dust with extra cocoa.
